Roasted Veggies w/Garlic EVOO & Fig Balsamic

serves approx. 6 as a side

Ingredients:

  • Mixed bell peppers (Red, Yellow, orange & Green)
  • 1 zucchini-peeled & bite sized slices
  • 4 plum Tomatoes (cut-up – bite sized) OR 16 grape tomatoes (halved)
  • Lg onion (Red or Vidalia) – peel, core, halve & quarter (your size preference)
  • 3 TBSP La Terra Garlic infused EVOO + *a bit for coating baking sheet
  • 1 TBSP La Terra Fig BV
  • 1 tsp Tuscan Herb Sea Salt (or Himalayan Sea Salt)
  • Fresh ground pepper (to taste)
  • 1 tsp cumin

Directions:
*Coat roasting pan or cookie sheet with Garlic EVOO or parchment paper

  • Layer vegetables around the cooking tray
  • Combine:
    – Garlic EVOO, Fig Balsamic, sea salt, pepper & cumin
    – Drizzle over veggies
  • Bake 25-30 minutes until slightly tender – your house will smell amazing!
    Perfect side dish.
  • **Add chicken, beef strips, or seafood (pre-cooked) for a complete meal!

Summertime Greek Salad – La Terra Style!

Ingredients:

  • 1 head Romaine lettuce, chopped
  • 1/3 c La Terra Tuscan Herb EVOO
  • 1 shallot, peeled & diced small
  • 3 TBSP La Terra
  • Champagne BV
  • 1 handful grape tomatoes, diced
  • 1 TBSP lemon juice (fresh squeezed)
  • 1/2 c La Terra mixed olives (your choice)
  • 1 tsp dried oregano
  • Chickpeas (1 cup cooked/cooled)
  • 1/2 tsp dried rosemary
  • 1/4 lb feta or goat cheese, crumbled
  • 1/4 tsp sea salt
  • 1 diced fresh avocado
  • Fresh ground black Pepper (to taste)

Directions:

  • Mix lettuce, onions, tomato, olives and feta cheese into a large salad bowl.
  • Whisk the olive oil, balsamic vinegar, lemon juice, oregano, rosemary, sea salt and black pepper
  • Pour on top of salad and serve.

*Want to add a little more protein?*
Separately cook fresh shrimp, squid or chicken to mix with salad for a full meal!

Shrimp Ceviche – La Terra Style!

Amazingly delicious!

Ingredients:

  • 1 lb cooked shrimp, peel/de-vein
  • 2 diced ripe mangoes
  • 1 c diced peeled cucumber
  • 2 Serrano peppers – seed & chop
  • 1 c La Terra California Lime Evoo
  • 1 c La Terra Coconut white BV
  • ¼ c La Terra Citrus Habanero EVOO
  • ¼ c chopped cilantro
  • 1 c diced tomato
  • Juice of 1 Lime
  • Salt & Pepper to taste

Directions:

  • Combine chopped shrimp, mangoes & salsa in a bowl.
  • Add diced mangoes to your desired taste (the more the merrier, I say!)
  • Add a tostada shell (if you wish) as a plate
  • Salt and pepper to taste
  • Add ceviche mixture to the top of rice, tostada shells, tortilla chips, toasted rounds, fish or even a dark green leafy salad blend… It’s actually great in a bowl on it’s own!

La Terra Pasta Salad

serves: 8

Ingredients

  • 1# pasta (type-your call)
  • 2 c bell pepper strips
  • 2-diced tomatoes
  • 1/2c sliced Parm-Romano olives
  • 3-4 sautéed shallots
  • ½ c pimento strips (jar,drained)
  • ½ # pepperoni (choice)
  • 1 /2 # cubed provolone

Dressing:

  • ¾ c La Terra Garlic EVOO
  • ¾ c. any white La Terra BV
  • Tuscan Herb sea salt
  • 1 TBSP oregano
  • ½ tsp ground blk pepper (taste)
  • 1TBSP coconut sugar (if needed)

Directions:

  • Whip together dressing – set aside
  • Cook pasta (box directions)-cold water rinse
  • Slice pepperoni circles in quarters
  • Mix together everything except provolone
  • Pour dressing over mix
  • Chill well
  • Add provolone when it is time to serve
