Roasted Veggies w/Garlic EVOO & Fig Balsamic

serves approx. 6 as a side


  • Mixed bell peppers (Red, Yellow, orange & Green)
  • 1 zucchini-peeled & bite sized slices
  • 4 plum Tomatoes (cut-up – bite sized) OR 16 grape tomatoes (halved)
  • Lg onion (Red or Vidalia) – peel, core, halve & quarter (your size preference)
  • 3 TBSP La Terra Garlic infused EVOO + *a bit for coating baking sheet
  • 1 TBSP La Terra Fig BV
  • 1 tsp Tuscan Herb Sea Salt (or Himalayan Sea Salt)
  • Fresh ground pepper (to taste)
  • 1 tsp cumin

*Coat roasting pan or cookie sheet with Garlic EVOO or parchment paper

  • Layer vegetables around the cooking tray
  • Combine:
    – Garlic EVOO, Fig Balsamic, sea salt, pepper & cumin
    – Drizzle over veggies
  • Bake 25-30 minutes until slightly tender – your house will smell amazing!
    Perfect side dish.
  • **Add chicken, beef strips, or seafood (pre-cooked) for a complete meal!
