“Impress the Guests” Salad

  • 1 Romaine lettuce head, shredded
  • 1 ripe tomato or (1 c grape tomatoes)
  • 2 stalks of celery, sliced into bits
  • ½ cup Swiss cheese, Julienne
  • ½ cup ham cubed
  • ½ cup Lucques Olives
  • 2 TBS Worcestershire Sauce
  • ½ cup Garlic Extra Virgin Olive Oil
  • ½ cup 25 Star White Balsamic Vinegar
  • 2 TBL grated Romano
  • Applewood Sea Salt (to taste)


  • Mix Lettuce, sliced tomatoes, celery, Swiss cheese, ham & olives in a large bowl
  • In a blender add: garlic, white balsamic, olive oil, Romano cheese & Worcestershire in a food mill/blender
  • Puree until dressing becomes an emulsion. Add dressing to salad & toss well

Smoked Sea Salt Caramel Dark Chocolate Chip Cookies

Made with Applewood Smoked Salt
Makes 4 Dozen Cookies


  • 2 1/4 c all purpose flour
  • 1 tsp baking soda
  • 1 c unsalted butter, melted/ cooled
  • 2 tsp Applewood smoked salt
  • 1 c packed dark brown sugar
  • 1/2 c white sugar
  • 1 TBSP vanilla extract
  • 1 egg + 1 yolk
  • 1- 1/2 c dark chocolate chips
  • 1-1/2 c caramel bits


  • In a medium bowl, sift together the flour, baking soda, and salt; set aside
  • In a large bowl, cream together the melted butter, brown sugar and white sugar until well blended
  • Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients in three batches until just blended
  • Stir in the chocolate and caramel by hand using a wooden spoon. Wrap and refrigerate dough overnight, or at least an hour
  • Preheat oven to 375°. Line cookie sheets with silicone baking mats or parchment paper
  • Take cookie dough out to room temperature while the oven heats
  • Using a medium cookie scoop (or roll 2 Tbsp), drop cookie dough onto the prepared sheets about 2 inches apart. Sprinkle with additional smoked salt if desired
  • Bake for 8 minutes or until edges are barely golden (they will look underbaked)
  • Cool on baking sheets for 10 min before transferring to wire racks. Store at room temperature in an airtight container

Sauteed Mushrooms with Traditional Balsamic Vinegar

This dish is ideal as an appetizer or side dish
Serves 4


  • 1 lb sliced mushrooms
  • ¼ cup La Terra Fresh Garlic Extra Virgin Olive Oil
  • 2 TBSP Traditional Balsamic Vinegar
  • Tuscan Sea Salt & Pepper to taste


  • Heat pan on medium high. Add olive oil, then mushrooms
  • Saute mushrooms till golden brown
  • Finish with balsamic vinegar, salt and pepper. Serve immediately

Greek Salad

  • 2 firm tomatoes
  • 1 English cucumber
  • 1 medium Red onion
  • ½ cup parsley
  • 1 green pepper
  • 10 La Terra Garlic Stuffed Olives
  • ½ tsp Tuscan Herb Salt
  • 3 oz feta cheese
  • 1 tsp oregano
  • 4 TBSP La Terra Extra Virgin Olive Oil (your choice)
  • 1 TBSP Garlic Balsamic Vinegar


  • Wash tomatoes, pepper, cucumber and parsley
  • Cut vegetables into pieces. Place pieces in a salad bowl; add thinly sliced onion & olives
  • Beat olive oil with salt and oregano, pour the dressing over the salad. Mix well, place feta on top!
