Extra Virgin Olive Oil (EVOO) is made by crushing olives and extracting the juice, that’s it! No Chemicals are used for extraction of oil nor is industrial refining a part of the process; unlike other available cooking oils!

Extra virgin is the highest quality and most expensive olive oil classification. A quality EVOO has no defects and a flavor of fresh olives.

The oil is made entirely by mechanical methods without the use of any solvents. The production takes place in temperatures that will not degrade the oil.

Koroneiki – COR-OH-KNEE-KEY: Koroneiki EVOO is best known for it’s fruitiness and stability which means that it will keep it’s freshness and flavor a longtime. Koroneiki is rich and full flavored with a peppery finish perfect for savory dishes and sweet ones.

Ogliarola – OGLI-AROLA: This olive has a deep fruit/grassy aroma with a “white fruit” (apple & white peach) taste followed up with a light almond aftertaste. This cultivar has a reputation of maintaining a consistent taste throughout the harvest year. Color is golden yellow with light green reflex.

Spanish Signature EVOO: Some oils are made from a single fruit, while other, more complex oils are made from several types of olives. These three varieties; Barbequina, Picual, and Hojiblanca, marry and create a unique flavor profile culminating into a truly beautiful olive oil.
