Aunt Lois’ Corn Bread Casserole

Ingredients:

  • 1 (sm) can whole kernel corn-drained or an ear (scrape kernels)
  • 1 (sm) can creamed corn or ½ c fresh creamed corn
  • 1 pkg (8.5 oz) corn muffin mix
  • 1 egg (or ½ c applesauce)
  • 2 TBS LaTerra Butter EVOO
  • ¼ tsp garlic powder
  • ¼ tsp paprika, (set aside)

Directions:

  • Preheat Oven at 400F
  • Stir together til blended
  • Pour into a well greased 11x7x2 pan (coconut oil is ideal) or a cooking spray

    Sprinkle paprika over batter

  • Bake at 400F for 25-30 minutes, uncovered
  • Makes 4-6 servings.

Cabbage Ramen Noodle Salad

Ingredients:

  • 1/2 head cabbage, finely chopped
  • 4 green onions, chopped
  • 1 pkg. Top Ramen noodles (beef or chicken), crumbled
  • 1/2 cup sliced almonds
  • 1 pkg. sunflower seeds (optional)

Directions:

  • Mix together except the noodles and refrigerate a few hours.

DRESSING:

  • 2 tbsp. sugar
  • 3 tbsp. vinegar
  • 1/2 cup LaTerra Extra Virgin Olive Oil
  • 1/2 tsp. pepper
  • Flavor packet from the noodles
