Blueberry Lemon Pound Cake

  • ¾ c LaTerra Meyer Lemon Extra Virgin Olive Oil
  • 4 large range free eggs
  • 1 ½ cup granulated sugar
  • 3 cup all-purpose flour
  • 2 cup fresh or frozen blueberries
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup light or regular sour cream
  • 1 tsp vanilla extract
  • Powdered sugar (sprinkle on top)


  • Preheat oven 350 F. Spray bundt pan with a non-stick spray
  • Beat 2 cups sugar and ¾ c of oil at medium speed with mixer. Blend well
  • Add eggs to the mixture one at a time. Beat well after each egg
  • Remove 2 TBSP flour from the measured 3 cups. In a bowl add the 2 cups of berries and the 2 TBSP flour. Toss well
  • In another bowl, combine the remaining flour, baking powder, baking soda and salt
  • Add the flour mixture to the sugar mixture, alternating with sour cream. Fold in the blueberry and vanilla
  • Bake for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean
  • Cool cake in the pan for about 45 minutes. Remove from pan and sprinkle with powdered sugar

Roasted Beet and Orange Salad

  • 6 large beets, topped
  • 1 cup clementines
  • ½ red onion thinly sliced
  • 1/8 tsp ground cinnamon
  • 2 TBSP White Balsamic Vinegar
  • 2 TBSP Blood Orange Extra Virgin Olive Oil
  • Salt & Pepper to taste


  • Wash beets well. Wrap in tin foil. Roast in oven at 400F for 1 hour (till tender)
  • Cool. Slip off skins. Slice beets, cut lengthwise or cube. Mix with oranges and onion
  • Sprinkle with cinnamon. Add olive oil, vinegar, salt and pepper. Toss
